Ingredients

2 cups corn kernels
3 tablespoons cornstarch
1 tablespoon oil
2 eggs
1 egg white
1/2 cup chicken stock
1 cup skimmed milk
1/2 tsp ground white pepper
1/4 tsp grated nutmeg
2 Tbsp grated Parmesan cheese
1 teaspoon sugar

Method

Preheat oven to 375 degrees. Lightly spray 8x8x2in glass baking dish with oil. Puree 1 1/2 cups corn with corn flour in blender until almost smooth. Set aside. Whisk eggs, egg white, milk, stock, sugar, pepper and nutmeg in a large bowl. Add salt to taste.

Mix in corn puree, 1 tbs Parmesan and remaining corn kernels until blended. Pour mixture into prepared dish and sprinkle remaining cheese. Set in a bain-marie and place in the oven for 45 minutes until just set. Let stand for 5 minutes and serve.
